{"id":901,"date":"2010-03-01T12:39:36","date_gmt":"2010-03-01T20:39:36","guid":{"rendered":"http:\/\/blog.summerhillhomes.com\/?p=901"},"modified":"2024-03-06T13:30:15","modified_gmt":"2024-03-06T21:30:15","slug":"its-almost-time-for-st-patricks-day-and-corned-beef","status":"publish","type":"post","link":"https:\/\/www.summerhillhomes.com\/blog\/2010\/03\/01\/its-almost-time-for-st-patricks-day-and-corned-beef\/","title":{"rendered":"It&#8217;s almost time for St. Patrick&#8217;s Day and Corned Beef!"},"content":{"rendered":"<p>Yes, we know, St. Patrick&#8217;s Day isn&#8217;t until two weeks from now, but we&#8217;re here to help you get an early start on the all the fun! \u00c2\u00a0One of the recipes needs two weeks to cure in your fridge, but the hands-on times is minutes! \u00c2\u00a0Trust me I tried it this weekend. \u00c2\u00a0 Hurry, if you start this recipe soon, it will be ready just in time for St. Patrick&#8217;s Day.<\/p>\n<p>I found this\u00c2\u00a0<a href=\"https:\/\/bit.ly\/aY9yHz\">homemade corned beef recipe in Martha Stewart Magazine<\/a> last year, but was too late to try it for St. Patrick&#8217;s Day in 2009. \u00c2\u00a0I really wanted to try it, so I saved it for this year.<\/p>\n<figure style=\"width: 125px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" loading=\"lazy\" class=\" \" src=\"https:\/\/images.marthastewart.com\/images\/content\/pub\/ms_living\/2009Q1\/mld104519_0309_brining1_m.jpg\" alt=\"\" width=\"125\" height=\"156\" \/><figcaption class=\"wp-caption-text\">From Martha Stewart Magazine<\/figcaption><\/figure>\n<p>I made mine over the weekend and I was shocked by how simple it was to make. \u00c2\u00a0 The biggest challenge was finding pink curing salt, which surprisingly wasn&#8217;t available at Whole Foods or any other local grocery stores or even Sur La Table.<\/p>\n<p><!--more--><\/p>\n<p>Rather than keep searching, I took my search online and found out that pink curing salt contains sodium nitrite to keep the meat pink. \u00c2\u00a0As I am not a fan of sodium nitrite, I researched further and\u00c2\u00a0<a href=\"https:\/\/bit.ly\/a2RGht\">discovered that kosher salt should do the trick<\/a>, so I just used kosher salt without the pink curing salt.<\/p>\n<p>The recipe says that the corned beef will be ready in two weeks. Since it takes awhile to cook (3 to 3.5 hours on the stove or 4 to 5 hours in slow cooker on medium or 7 to 8 hours in a slow cooker on low), I decided this is a recipe much better suited for weekend cooking. We are going to cook it on March 11th, a bit before the actual day, but should still make St. Patrick&#8217;s Day fun as I will be making <a href=\"https:\/\/bit.ly\/bxLdDi\">Corned Beef Hash<\/a> for dinner on the actual day!<\/p>\n<p>Making the brine was surprisingly easy. Hands-on time was about 15 minutes total! \u00c2 I did have to wait an hour or so for the liquid to cool, but who says you have to be in the kitchen for that?<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone wp-image-5376 size-full\" title=\"The brine\" src=\"https:\/\/www.summerhillhomes.com\/blog\/wordpress\/wp-content\/uploads\/2010\/03\/IMAG0137-1.jpg\" alt=\"\" width=\"800\" height=\"535\" srcset=\"https:\/\/www.summerhillhomes.com\/blog\/wordpress\/wp-content\/uploads\/2010\/03\/IMAG0137-1.jpg 800w, https:\/\/www.summerhillhomes.com\/blog\/wordpress\/wp-content\/uploads\/2010\/03\/IMAG0137-1-300x201.jpg 300w, https:\/\/www.summerhillhomes.com\/blog\/wordpress\/wp-content\/uploads\/2010\/03\/IMAG0137-1-768x514.jpg 768w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<p>I made it with a 3lb beef brisket instead of 5lb as there are just two of us. I found that a gallon size Ziploc bag was the perfect fit for the meat and the liquid.<\/p>\n<figure id=\"attachment_5377\" aria-describedby=\"caption-attachment-5377\" style=\"width: 640px\" class=\"wp-caption alignnone\"><img decoding=\"async\" loading=\"lazy\" class=\"wp-image-5377 size-large\" title=\"The beef\" src=\"https:\/\/www.summerhillhomes.com\/blog\/wordpress\/wp-content\/uploads\/2010\/03\/IMAG0139-1-685x1024.jpg\" alt=\"\" width=\"640\" height=\"957\" srcset=\"https:\/\/www.summerhillhomes.com\/blog\/wordpress\/wp-content\/uploads\/2010\/03\/IMAG0139-1-685x1024.jpg 685w, https:\/\/www.summerhillhomes.com\/blog\/wordpress\/wp-content\/uploads\/2010\/03\/IMAG0139-1-201x300.jpg 201w, https:\/\/www.summerhillhomes.com\/blog\/wordpress\/wp-content\/uploads\/2010\/03\/IMAG0139-1-768x1148.jpg 768w, https:\/\/www.summerhillhomes.com\/blog\/wordpress\/wp-content\/uploads\/2010\/03\/IMAG0139-1.jpg 800w\" sizes=\"(max-width: 640px) 100vw, 640px\" \/><figcaption id=\"caption-attachment-5377\" class=\"wp-caption-text\">A little fuzzy, but here is mine ready for the fridge time<\/figcaption><\/figure>\n<p>And, since I enjoy doctoring recipes, I am taking the first recipe up until just before the cooking point and then switching to <a href=\"https:\/\/bit.ly\/cjGr9f\">this ale-braised corned beef, Brussel sprouts and carrots recipe that I found in Real Simple<\/a>. We try not to eat too many potatoes in our house and I am not a big fan of cabbage, so Brussel sprouts and carrots sound more appealing to me.\u00a0 And, if you only want to try the simpler recipe, <a href=\"https:\/\/www.yelp.com\/biz\/pape-meat-co-millbrae\">Pape&#8217;s Meat Co. in Millbrae<\/a>, where I bought my beef brisket, has promised me that if mine doesn&#8217;t turn out, their corned beef is really, really good.
